  2. Drain the mussels and add them to the pan. Now add the beer and let it burn off for a min or two. Season to taste with plenty of pepper and a sprinkle of salt. Cover and turn down the heat to low. Leave to cook until the mussels open, about 2-3 mins.
  3. Serve in the sauce with bread and chips.
